Freezer Cooking – Day 1

This is the first day of freezer cooking for me! I had previously doubled recipes to freeze but nothing lasted very long in there… and I have never really planned to do this on as large of a scale. I found a Brown Bag Burrito recipe via amysfinerthings.com and decided to give it a try. For future reference though, ‘Day 1’ doesn’t mean that I will be doing consecutive days of freezer cooking… just trying to keep a tally on how many days I spend on this until I feel that my freezer is sufficiently stocked with meals, and that future freezer cooking will be to restock versus build up a stock.

We had tacos earlier in the week… so I had taco ground beef and fajita chicken, and sauteed onions and bell peppers sitting in the fridge along with some 50% off, salsa refried beans J brought home from work.

I threw the meat in a pan to warm it up, threw in 1 1/2 cans of beans and a little water and mixed it all up. I also ended up adding 1/2 a packet of taco seasoning because it tasted a bit bland (and bean-y) to me. For the chicken, I did the same thing as the beef, plus the onions and peppers.

Including wrapping time, the whole process took me 1 1/2 hours. I’m sure it would have taken me longer if I had to cook the meats and veggies versus simply warming them up but considering I used up leftovers everyone was tired of eating and made 28 burritos for the freezer (even though 1/2 of them were mini burritos because I ran out of regular burrito tortillas) I’m considering this a successful first try!!
